Sardines with a smoky touch caught in a sustainable way and prepared using artisan methods at Arousa Estuary.
They are soaked in brine using a traditional technique. They are then slowly and carefully cleaned and passed through a roasting phase to be later beech-smoked at low temperature for more than one day, ensuring that the sardine takes on all the subtleties of the wood and that characteristic flavour.
Finally, they are packed by hand cutting them one by one, olive oil is added to preserve their full flavour and texture, and they are stored in the cellar for a time to rest and combine the flavour of the sardine with the flavour of the oil and the smoky touch.
