Red wine belonging to the Ribeira Sacra Designation of Origin (Amandi), and produced specifically in the centennial vineyards of the Amandi area, the most famous area of the Ribeira Sacra.
Made from Mencía grapes, this wine has been made for 5 generations in the winery located in Sober on the slopes of the River Sil, with its steep terrain on the river canyons that has given rise to what is called "heroic viticulture", performed by great lovers of this wine since Roman times.
From then to the present day, high quality wines have been produced, due to their careful, special and artisan selection of the raw material.
The difficulty of this area generates limited productions, but of excellent quality that give the wine a balanced acidity, thanks to the area's combination of hours of sun and rain, contributing a greater aromatic intensity, and its characteristic red cherry and violet hues.
It is harvested manually in small boxes, so that the grapes arrive at the winery intact, where they are selected by hand.
The miracle is to obtain small productions of these exclusive wines in which fructosity and clean aromas are predominant.

The traditional slaughter carried out in the inland towns of the province of Lugo is the base of the know-how of these pork scratchings. Made from premium quality pigs, fed with a base of cereals and chestnuts.
For their preparation, pieces like rind, belly or bacon, among others, are meticulously selected. These are slowly melted for several hours to obtain a uniform texture, they are then seasoned to obtain their characteristic golden colour. Finally they are pressed as is typical in this area of Lugo, for better preservation and handling, to obtain this cold cut.

The know-how accumulated over the years in the traditional slaughters of the Galician villages is reflected in these chorizos made in the province of Lugo, from premium pigs fed with cereals and chestnuts.
Once selected the meat is marinated with a combination of spices, with paprika as the main flavour, giving it its characteristic red colour.
It is stuffed in natural pig gut, and smoke cured in a traditional way, giving it its characteristic flavour, which perfectly balances the product's own spiciness. Ideal for serving both raw and boiled or grilled, it is a very succulent piece of exquisite flavour, with a pleasant texture that is not greasy.

The San Simón da Costa cow's cheese is a soft textured, semi-hard cheese, which has an exclusive and prominent flavour.
Made in the province of Lugo from cow's milk from the Frisian, Alpine Brown and Galician Blonde breeds, this cheese from the San Simón da Costa Designation of Origin has an intense tradition in Galicia. The region of Terra Chá is where these characteristic cheeses are made following a traditional recipe from using the best raw materials.
In addition to the excellent raw materials, the main characteristic of this cheese is that it has been smoked with native birch wood from the Galician forests, and has been matured for 200 days unlike the other cheeses, accentuating its very particular flavour and aroma.

These steaks will be accompanied with the most distinguished beans of Galicia, from Santo Tomé de Lourenzá (Lugo), marked with the Protected Geographical Indication stamp
The legumes produced in the Mariña Lucense have exceptional culinary quality. Due to the characteristics of the soil and the traditional techniques used in their cultivation, obtaining a bean with fine skin and tender pulp, with a pleasant texture and a characteristic flavour.
These beans are subjected to a pre-cooking process to acquire the proper texture. The sauce made from olive oil, garlic, paprika, vinegar and salt accompanies and enhances the whole flavour of the product.
It is packed entirely by hand, to ensure the cod steaks remain whole and retain all their flavour. It is an entirely artisan recipe, free of preservatives and colouring.
