These cockles from the Muros-Noia ría are harvested using traditional methods and selected by hand during the months from October to January. In this way, only the largest and best-quality cockles are chosen for canning. The scarcity and uniqueness of this product is what makes it so special. The intense flavour of this mollusc leaves it needing little else to be one of the flagship products of gourmet preserves. The cockles are washed in sea water to prevent them from losing their essence and are then cooked, shelled and canned by hand to be enjoyed in their natural state, with the incredible and exceptional flavour only provided by select and unique Galician products such as this.
